Chole (Chickpea Curry)

Chole (Chickpea Curry) is a flavorful North Indian dish prepared with tender chickpeas simmered in a spicy tomato-onion gravy. Infused with aromatic spices, it offers a rich and hearty taste. This protein-rich curry pairs perfectly with rice, roti, or fluffy bhature.
Ingredients:
- Kabuli Chana (Chickpeas)
- Onion
- Tomato
- Ginger-Garlic
- Green Chilies
- Cumin Seeds
- Turmeric Powder
- Red Chili Powder
- Coriander Powder
- Garam Masala
- Salt
- Oil or Ghee
- Fresh Coriander Leaves (for garnish)
Preparation Steps:
- Wash and soak Kabuli Chana in water overnight (8–10 hours). Drain before cooking.
- Pressure cook the soaked chickpeas with salt and water until soft and tender (about 4–5 whistles).
- Heat oil in a pan. Add cumin seeds, then sauté chopped onions until golden brown. Add ginger-garlic paste and cook until fragrant.
- Add chopped tomatoes, turmeric, red chili powder, coriander powder, and salt. Cook until the oil separates from the masala.
- Add the boiled chickpeas (with a little cooking water) to the masala. Mix well and simmer for 10–15 minutes to blend flavors.
- Sprinkle garam masala and garnish with fresh coriander leaves. Serve hot with rice, roti, or bhature.
